1) Golgappas

Golgappa, Panipuri

Whether you call it Pani Puri or Golgappa, both the names are mouthwatering. Nowadays we get Golgappas in malls and restaurants also. When we eat Golgappas outside, there is some limitation to it. What if we prepare them at our home? Of course, you will get a chance to eat unlimited Golgappas which will fulfill your cravings.

Ingredients

For golgappas: 1 cup refined flour(maida), 1 tbsp oil, oil for frying

For filling:1 cup boiled potatoes, 1 cup boiled sprouts

For jaljeera: 2 tbsp pudina paste, 2 lemons, 50 gm imli(tarmarind), 1 tsp roasted jeera powder, 1/2 tsp rock salt, 1/2 tsp salt

Method
Knead oil and flour with water to make a hard dough.Roll out a thin roll.Cut small rounds out of it with a cutter.keep the rounds on a damp cloth.keep covered until the whole dough is used.Heat the oil.Put a few rounds at a time and keep on turning them until they are puffed and become golden in colour.The ones which are not puffed can be used for papri.

Soak imli in water for some time.then take out the pulp.No w mix it with all the ingredients of jaljeera.add 8 to 10 cups of water.

To serve golgappas break these from one side, fill with potatoes, sprouts and jaljeera.

2)Papri Chaat

Ingredients

For papri: 1 cup flour, 1 tbsp oil, 1 cup boiled potatoes cut into small pieces, Oil for frying

For saunth:1/2 cup imli pulp, 1/2 tsp salt, and rock salt each, 1 tsp roasted jeera powder, 2 cups well-beaten curd

Method

Mix the ingredients of the saunth and boil it till the required consistency. Knead flour and oil to make a stiff dough.Roll out a big roll and cut small rounds out of it.Heat oil and fry the papris till golden in colour. Cool and store in an airtight box.

For serving papri chaat, put the papris in a serving dish or you can put 6 to 7 papris in individual plates.Put potatoes over these.Pour curd and saunth.sprinkle some roasted jeera powder and red chilli powder.Your delicious papri chaat is ready.

3) Fruit Chaat

Ingredients

2 boiled potatoes, 1 tomato, 1 apple, 1 orange, 1 guava, 2 bananas, 1/2 cup grapes black or green or both, 1/2 cup pomegranate seeds, 1 slice of papaya, Juice of 1 lemon, 1 tsp chaat masala, 1 tsp sugar, Little salt as per taste

Method

Peel potatoes, papaya, and bananas.cut all the fruits into bite size.add lemon juice, chaat masala, sugar and salt and mix well.serve immediately.
